When I see and hear a lot of information about typical Japanese home cooking, it seems that it focuses on miso soup, curry rice and simmered dishes. It is said that these dishes are different in taste depending on the home. Miso soup taste depends on the combination of ingredients, miso and the soup stock. Curry was originally from India, but (as has been explained before) curry rice has become a national food for Japanese. There are many kinds of curry seasoning, and the taste differs depending on the home. As for simmered dishes, the typical is niku-jaga which is simmered meat, potatoes, onions, water, soy sauce and sugar or sweet sake for seasoning (mirin). The adjustment of water, soy sauce and sugar is different from home to home. Therefore, it is often said that the taste is different depending on the home.
