Houjicha is brown and similar to black tea because it is made by roasting green tea leaves at high temperature, which makes the tea leaves brown. Houjicha is roasted at a high temperature so that the caffeine is reduced, and so that the tannin, which is the bitter component, is removed and the astringency is reduced, resulting in a clean and fragrant taste. Houjicha is steamed, rubbed and dried before roasting. By rubbing the tea leaves, the flavor is enhanced. Houjicha has a relaxing and cooling effect, and is said to prevent high blood pressure. Because houjicha has a unique aroma, almost no bitterness or astringency, and is light on the palate, it is less stimulating and easier on the stomach, making it a good tea to drink during meals, after a greasy meal, or before going to bed. Houjicha is also available in PET bottles, which can be purchased at supermarkets, convenience stores, and vending machines.
