ingredients:
- 1 3/4 ounces karashi-mentaiko
- (spicy alaska pollack roe)
- 10 1/2 ounces potatoes
- 3 green perilla leaves (optional)
- 1 teaspoon lemon juice
- 1/6 ounce butter
- 2 heaping tablespoons mayonnaise
- a little salt
- 5 teaspoons milk
- 2 cups water
step 1:
Because mentaiko is covered by a thin film, cut the mentaiko in half lengthwise and take out the contents. Place in a bowl.
step 2:
Cut the potatoes into cubes. Chop the green perilla leaves thinly (optional).
step 3:
Melt the butter in a microwave oven. Add the melted butter, mayonnaise, milk, a little salt and lemon juice to the mentaiko in the bowl and mix.
step 4:
Pour the water into a pan and add the potato cubes. Cover and boil for 25 to 30 minutes on medium heat until they become soft. Remove from the heat. Drain the water from the pan.
step 5:
Add the potatoes and green perilla leaves (optional) to the sauce in the bowl and mix.
comment:
The karashi-mentaiko sauce suits the simple taste of potatoes very well. This dish can also be prepared with mashed potatoes and eaten as is or with bread. Please try it whichever way you prefer.
