ingredients:
- 2 eggs
- 4 ounces cake flour
- 7 ounces mashed sweetened
- red bean paste (anko)
- 2 4/5 ounces sugar
- 1 teaspoon baking soda
- 2 tablespoons sweet sake for seasoning (mirin)
- 7 teaspoons water
step 1:
Sift the flour. Beat the eggs and the sugar in a bowl with a beater about 1 minute.
step 2:
Add the sweet sake for seasoning (mirin), baking soda and 1 teaspoon of water and mix.
step 3:
Add the flour and mix about 1 minute. Set aside for 20 minutes.

Add 6 teaspoons of water and mix.

Warm a non-stick frying pan. To make each sandwich half, scoop out 3 tablespoons of the mixture and place in the frying pan. Cook on low heat for 2 minutes.

Turn each half over and cook the other side for the same amount of time. Remove from the pan. Make the remaining pancakes in the same manner.
step 7:
To make one sandwich, place 1/4 of the mashed sweetened red bean paste (anko) on one pancake and spread. Cover with the second pancake. Make the remaining sandwiches in the same manner.
