I introduced the topic of wagyu (Japanese beef) before. Japanese beef cattle are raised in many cities in Japan, but the most famous place for Matsusaka beef is Matsusaka City located in Mie Prefecture. (This is also a city near Ise Shrine, the top Shinto shrine in Japan.) The features of wagyu are fine sashi (marbling), soft meat quality, elegant scent and good texture. Matsusaka gyu is the top quality of this luxury beef and is exquisitively tasty. It is used in sukiyaki, shabu shabu, steak and yakiniku (Japanese barbecue) dishes. If you are interested in Matsusaka gyu while in Japan, you should go to Matsusaka City or large cities such as Tokyo, Osaka and Nagoya where you will find many restaurants and meat shops which serve Matsusaka gyu dishes. When you eat upscale Matsusaka gyu, it quickly melts in your mouth and leaves a wonderful umami taste that will last a long time.
