- 1 to 1 1/3 tablespoons soy sauce
- 2 quarts water (if preparing hot noodles)

step 1:
This recipe can be eaten cold or hot. To prepare cold noodles, go to Step 3. For hot noodles, pour the water into a pan. Bring to a boil and add the noodles.

step 2:
Boil about one minute. After boiling, Remove the noodles and drain them in a colander.

step 3:
Divide the noodles among 2 serving bowls. Sprinkle the thick white noodles (udon) with your favorite condiment(s).

Pour the soy sauce over the noodles.

This dish is simple and delicious. The most famous version uses Sanuki noodles, which are very chewy and have a good taste. Sanuki is the former name of Kagawa Prefecture in the Shikoku region.
