
ingredients:
- 18 ounces pork spareribs
- 9 ounces japanese white radish
- 5 garlic cloves
- 4 tablespoons soy sauce
- 3 tablespoons sugar
- 2/5 cup sake
- 1 1/2 cups water
- 1 tablespoon salad oil

step 1:
Stab both sides of the spareribs 2 or 3 times with a fork.

step 2:
Peel the Japanese radish and cut into 1-in. wide slices; then cut into halves.

step 3:
Heat the oil in a frying pan over a high flame. Lower to a medium heat and sear the spareribs on each side with the whole garlic cloves for a couple of minutes. Remove from the heat.

step 4:
Put the spareribs, Japanese white radish, garlic cloves, sake and water in a pan. Bring to a boil on high flame. Skim off the surface scum and cover. Bring to a boil. Reduce heat and simmer for about 40 minutes on low heat.

step 5:
Add the sugar and soy sauce. Simmer for about 25 minutes on low heat.

The umami of the spareribs soaks into the Japanese white radish, and, combined with the soy sauce taste of the soup, makes this a very delicious dish.
