
ingredients:
- 250 g red (azuki) beans
- 4.5 liters water

step 1:
Rinse the red (azuki) beans. Pour 1 liter of water into a pan. Add the beans and cover. Boil for 10 minutes on high heat.

step 2:
Add another 1 liter of water to the pan and boil for 10 more minutes on high heat.

step 3:
Drain the beans in a colander and rinse under cool water. Discard the water in the pan.
step 4:
Return the beans to the pan. Add 1 liter water and cover. Bring to a boil and simmer about 10 minutes on low heat until beans become very soft.

step 5:
Pour another 1 liter water into a big bowl and add the beans and boiled water. Wait for the beans to sink.

step 6:
Pour out the cloudy water and add the final 0.5 liter of water.

step 7:
Drain in a colander and leave for 10 minutes until completely drained.

Boiled red beans are often used in sweetened red bean paste (azuki-an).
