grilled atlantic mackerel with thin white noodles

ingredients:

  • 4 pieces (6 1/2 ounces)
  • Atlantic mackerel
  • 7 ounces dried thin white
  • noodles (sōmen)
  • 1 1/2 ounces scallions or chives
  • a little salt
  • 6 tablespoons soy sauce
  • 6 tablespoons sugar
  • 2 cups water
  • 1 cup sake
  • 1 gallon water for boiling noodles

step 1:

Wash and pat dry the Atlantic mackerel and lightly salt them on the fleshy side. Place on a grill under high heat. Grill each side for 3 or 4 minutes.

step 2:

Pour the 4 liters of water into a pan. Bring to a boil and add the dried thin white noodles (dried sōmen). Boil for 1 minute and 30 seconds.

step 3:

Add a cup of cold water to the pan if the water starts to boil over. After boiling, drain the noodles in a colander and quickly run cold water over them.

step 4:

Because too much starch and salt on the noodles can make them taste slimy, wash them with your hands under cold running water to remove any extra starch.

Chop the scallions (or chives).

step 6:

Add the water, sake, sugar and soy sauce in a pan. Bring to a boil and add the Atlantic mackerel. Simmer for 10 minutes.

step 7:

Add the noodles to the pan and mix. Remove from the heat.

Serve in a dish. Sprinkle the chopped scallions (or chives) over the top.

The combination of grilled Atlantic mackerel and thin white noodles is very good. Yaki-saba-sōmen is a traditional dish in Nagahama City in Shiga Prefecture (famous for Biwa Lake, the largest in Japan).
