ingredients:

step 1:

Cut off the roots of the enoki mushrooms 1in. from the end and cut in half.

step 2:

Beat the eggs in a bowl, and stir in the soy sauce.

Heat the butter in a frying pan. Add the enoki mushrooms. Sear and sometimes stir on medium-low heat for a couple of minutes.
