Tsukushi is a wild vegetable. Because it grows in mid-March, Japanese feel the coming of spring when they see tsukushi. However, it is rarely found in grocery stores. It is slightly bitter. It is mostly used in tempura or is boiled in soy sauce and sugar with beaten eggs. If you eat a tsukushi dish in Japan, you are pretty lucky because it is so rare.
